Peanut Butter Brownie Cheesecake Parfaits

Layers of brownie, peanut butter cheesecake, and cookie crumbs are topped with whipped cream and bits of Reese’s peanut butter cups. A great mini dessert recipe too.

Ingredients

  • 1 box fudge brownies made per box instructions
  • 12 chocolate cream filled cookies Oreos
  • 1 - 8 ounce package cream cheese softened
  • 1/2 cup powdered sugar + 1/3 cup divided
  • 1/4 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 5 Tablespoons heavy whipping cream
  • 1 can of whip cream
  • Mini Reese's peanut butter cups

Instructions

  1. Bake your favorite brownies, per box instructions. Set aside to cool.
  2. Place the cookies in a food processor and pulse until the cookies are crumbs. Reserve 1 Tablespoon for garnish.
  3. Beat the softened cream cheese until creamy. Add 1/2 cup powdered sugar and beat again. Add the peanut butter, vanilla and heavy whipping cream. Beat until creamy again.
  4. Cut brownie and place at the bottom of each cup. Pipe a layer of cheesecake filling. Top with 2 teaspoons of cookie crumbs. Pipe another layer of cheesecake filling.
  5. Top each parfait with whip cream, a few reserved crumbs and some peanut butter cups.
