Strawberry Pina Colada Popsicles

Ingredients

  • 13.5 oz Coconut Milk full-fat
  • 5.4 oz Coconut Cream
  • 1 1/2 cup Frozen Pineapple Chunks
  • 1 Tablespoon Rum Extract or 2 oz Rum for an alcoholic version
  • 16 oz Frozen Strawberries in syrup, thawed.

Instructions

  1. Place coconut milk, coconut cream, frozen pinapple chunks and rum (extract for the non-alcoholic version) in blender. Puree until the pineapple chunks are mostly blended.
  2. Pour mixture into popsicle molds about two-thirds full.
  3. Spoon the strawberries out of the thawed syrup into the popsicle molds, filling it close to the top. Note: Use a popsicle stick to push the strawberries down into the molds (to get the mixed look seen in the photo).
  4. Place a popsicle stick in the center of each pop.
  5. Freeze at least 3 hours.
  6. To un-mold; run water over aluminum lid to easily remove frozen popsicles.
