Jam-Filled Cream Cheese Sugar Cookies
These easy, jam-filled cream cheese sugar cookies are great any time of the year!
Sugar cookies are a classic holiday tradition in most families, but at Christmas time, I especially love Jam-Filled Cream Cheese Sugar Cookies in the shape of a snowflake!
These jam-filled cream cheese sugar cookies are not only beautiful, they’re easy to make and a fun baked gift to give to neighbors, family and friends.
You can get as creative as you want with the cookie cutters you use for this recipe. Some people prefer a round cookie base and then smaller Christmas cut outs like a tree or star.
This year, I selected a snowflake cutter for the base of the cookie and then used a smaller snowflake cutter to use as the cut out for the top of the cookie.
Once your cookie cutters are chosen, you’re ready to whip up a batch of this quick and easy dough.
The dough will need to be chilled prior to rolling it out, so be sure to give yourself the hour chill time or make the dough a day ahead.
Once ready, roll out the dough on a floured surface and cut out your cookies. Then use the smaller cookie cutter to cut out the centers of half of them.
Here’s a little trick that I do… For the shapes that I cut the smaller cookie cutter into, I leave the cut shape within the larger shape. Only after I place the cookie onto the parchment lined cookie sheet do I remove the cut shape from the cookie. It just makes it a lot easier to place and maintain the cut shape onto the cookie sheet.
The cookies are baked on a parchment lined baking sheet. You’re going to want to remove them before they start turning brown. The key is to have a pretty, pale colored cookie!
Once the cookies have cooled, sprinkle the top cookie (the one with the extra cut out in it) with powdered sugar. Then place a thin layer of jam onto each of the base cookies. Put the sprinkled top cookie on top of the base cookie. Lightly press the top and bottom cookies together to seal the deal.
BTW: I chose raspberry jam for today’s recipe because I love raspberry jam and also because of the pretty red color for Christmas. But these cookies taste great with ANY JAM, so pick whatever jam you like!
Stack up a few of the cookies, wrap it with some pretty ribbon and they’re ready to be shared with others!
Here’s the recipe for jam-filled cream cheese sugar cookies…
Jam-Filled Cream Cheese Sugar Cookies
Ingredients
- 1 cup butter softened
- 8 ounces cream cheese softened
- 1 ½ cups sugar
- 1 egg large
- 1 tsp vanilla extract
- ½ tsp almond extract
- 3 ½ cups flour
- 1 tsp baking powder
- Powder sugar for dusting
- ¾ cup jam I used raspberry for this recipe
Instructions
-
Blend the butter and cream cheese together at medium speed.
-
Add sugar, egg and extracts.
-
Mix the flour and baking powder together.
-
Add the flour and baking powder into the creamed mixture. Mix at low speed for 30 seconds. Be careful to not over mix.
-
Chill dough in fridge for 1 hour.
-
Roll out dough on floured surface until ¼ inches thick (this is important).
-
Cut the dough with the desired cookie cutter shape. I cut half out with the full snowflake shape and the other half with a smaller snowflake cutout in the middle.
-
Place cut out cookies onto a cookie sheet lined with parchment paper.
-
Bake at 375 degrees for 8-10 minutes. Cool on rack and when cookies are room temperature place a thin layer of jam on the full cutout cookie and then top with the cookie containing the cut out shape.
Recipe Notes
The key to making a good sugar cookie is to make sure that you cut the cookies thick enough and then don't over cook them!
