It’s that time of year when fresh strawberries are in abundance! So there’s not a better time than now to share my easy strawberry vanilla layer cake.

Let me start off with a little back story and my love for strawberries…

My first money-making job was picking strawberries at the ripe old age of 7!

And before that, my mom would take us three kids (my brother, sister and I) out to the local strawberry fields each year, where we lived in Washington State, to pick a few flats to make homemade strawberry jam.

My mom passed away when I was 11, but strawberry season carries a lot of fond memories and special times for me.

I like to make and share a variety of strawberry recipes with my family and friends. This easy strawberry vanilla layer cake is one of my own, but I’m also sharing a few of my friends strawberry recipes as well.

Let’s be honest…

I could totally make a white vanilla cake from scratch, make up some homemade strawberry jam, and whip up my own frosting – but that’s NOT what I’m sharing how to do today.

As the title of my recipe states, this is an EASY Strawberry Vanilla Layer Cake. So easy is what this is all about!

  • white cake in a box
  • frosting in a can
  • already made or store bought strawberry jam

Boom! This is easy.

And look at how gorgeous this looks! People will think you’ve spent hours preparing this delicious cake for them. Shhhh – I won’t tell and trust me, it tastes just as good as scratch!!!

I like to wash and cut my strawberries into thirds, leaving the center green stem on the middle strawberry cut for extra ‘natural’ beauty. Do you have to do this? No. It’s totally up to you.

If you want to put a few aerosol whip cream spray mounds on top, go right ahead. Or if you feel like just placing strawberries only on top, be my guest. You can’t go wrong, and it tastes yummy either way.

Easy Strawberry Vanilla Layer Cake

A beautiful, yet easy cake to make! And perfect during fresh strawberry season.

Ingredients

  • 1 box Betty Crocker Super Moist White Cake Mix
  • 1 ¼ cup water
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla extract or pure vanilla extract
  • 3 eggs
  • Strawberry jam
  • 1 Betty Crocker Whipped Whipped Cream Frosting (12 oz canister)
  • 1 lb Fresh Strawberries
  • 1 can whipped topping found in the refrigerated aisle for additional decoration

Instructions

  1. Preheat oven to 350Grease and lightly flour (3) 6” cake rounds.
  2. Beat cake mix, water, oil, vanilla and eggs in large bowl with mixer. Beat on medium speed for 2 minutes.
  3. Pour batter into prepared pans and bake immediately for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean.
  4. Cool in pans on wire rack for 15 minutes and then remove from pans. Allow cake to cool completely before frosting.
  5. Filling: A thin layer of strawberry jam.

  6. Frosting: Place the frosting in a mixing bowl. Beat the frosting with an electric mixer. (This tip basically doubles your frosting).

  7. Assembly: Place one layer of cake on a cake stand or serving plate. Top with filling and spread evenly. Leave outer 1/4” clear of jam. Repeat with the second layer.

  8. Apply a thin coat of frosting all over the cake. Using an offset spatula, you can smooth out the cake (or remove a lot of the frosting to give it a naked cake look).
  9. Place freshly cut strawberries on the top of the cake. If desired, spray some a few whipped topping mounds on top when ready to serve.
